“Slow and Low” Is How to Cook Pork Spare Ribs

If you’ve ever been intimidated by barbecue, here’s how to cook pork spare ribs.

It is a simple method.

You just bake the slabs in the oven at a low temperature for 2-3 hours.

Then, before serving, heat your grill and “finalize” the cooking process by coating the rib slabs with barbecue sauce and grilling just until the sauce is bubbly and caramelized.

Don’t worry If you don’t have a grill. Simply turn your oven up to 425°F and finish the process in the oven.

The result is delicious ribs that will melt in your mouth.

You can use your favorite barbecue sauce, or make Mary’s sauce (recipe below).  This homemade sauce has less sugar and no additives, and it makes the ribs something special.

So go ahead and cook up a slab or two, add some oven-roasted potatoes (recipe link here), and a green salad, and you are set for a memorable meal.

Barbecue Pork Spare Ribs

Ingredients

  • 2 ½ lbs. pork spare ribs
  • 1 tsp sea salt
  • ½ tsp ground black pepper

Instructions

  • Preheat your oven to 300°F.
  • Place the rib slabs on foil lined cookie sheets. Sprinkle and then rub them with sea salt and black pepper (rubbing makes a difference in how the spices permeate the meat).

  • Bake for 3 1/2-4 hours. The ribs should be easy to pierce with a toothpick, between the bones, when they are done.
  • If you are not grilling just yet, cool, wrap the ribs with the foil, and refrigerate.
  • About 30 minutes before serving, warm up the grill to a medium heat, and take the ribs out of the fridge.
  • Place the rib slabs onto the heated grill, coat them with sauce (one side at a time), and let the sauce cook and brown onto the ribs.
  • Serve with extra sauce.

Notes

Use a commercial barbecue sauce, or make the sauce below.

 

Mary's Barbecue Sauce

You can buy barbecue sauce. but it won't taste as good as this!

Ingredients

  • 8 oz. tomato sauce
  • ½ cup onion finely chopped
  • ¼ cup brown sugar packed
  • ¼ cup apple cider vinegar
  • 1 tbsp. chili powder
  • 2 tbsp. prepared mustard
  • 1 clove garlic, minced (or 1 tsp. crushed)

Instructions

  • Combine all ingredients in a small saucepan. Bring to boil, stirring constantly, and reduce heat to simmer. Cook 5 minutes, stirring occasionally.

Notes

Makes about 1 3/4 cups.  For best flavor, allow to cool before using.  Can be stored in a covered container in the refrigerator.
