Mmmm… a summer cocktail hits the spot on a sunny, warm evening.
Our local tavern serves a bright, cool cocktail made with cucumber, pear vodka, and lime juice. Here is my take on our local favorite. There is a crispness from the cucumber that makes this such a refreshing treat. Fresh lime juice has no substitute, so don’t even go there. You won’t regret the extra effort!
You will need to prep the cucumber water at least 2 days in advance.
Make the simple syrup
At least two days in advance, fill a glass pitcher with 4 c. water and 5-6 slices of cucumber. Cover and refrigerate.
To make the simple syrup, mix 1 c. sugar and 1 c. cucumber water in a saucepan. Continue stirring over medium heat until the sugar totally dissolves and the mixture just begins to thicken a bit (it will just be reaching the boiling point). Cool.
Pour into a glass jar, like a mason jar, and refrigerate the syrup. Keep the remaining water to dilute your cocktail, if you find it too strong; or, you can make more syrup, or drink it like you’re at the spa!
Make the cocktail
Fill a cocktail glass with ice.
Add 1 Tbs. fresh lime juice (about 1/2 lime)
Mix in 1-2 Tbs. cucumber simple syrup (above), to taste
Add 2 oz. pear-flavored vodka.
If you find the drink too strong, (or you want to be able to have a second cocktail!) add a splash of the reserved cucumber water.
Garnish with cucumber or lime slice.
What is so great about this cocktail? Well, I love the fresh tastes and that, as the ice melts, the drink just keeps getting better! Cheers ♥
