Mediterranean Chicken (Gluten-free)

Mediterranean Chicken is an easy main dish that incorporates antioxidants and good fats.  It's also a gluten-free entree that will appeal to a wide range of tastes.

  • 1/4 c. olive oil
  • 2 lbs. chicken pieces skinless, boned or boneless
  • 3-4 cooking onions sliced
  • 12 oz. tomato sauce
  • 6 oz. tomato paste
  • 1 tbs. oregano, dried
  • 2 tsp. cinnamon
  • salt & pepper to taste
  1. In a stew pot, heat olive oil and and add the chicken pieces, turning them to brown all sides. Add onions, toss, and continue browning.

  2. Sprinkle oregano over chicken and onions, then add the tomato sauce and paste. 

  3. Add cinnamon, salt, and pepper.

  4. Simmer on low heat about an hour.  Serve or cool and reheat.
