Greek Chicken is an easy main dish that is gluten-free and will appeal to a wide range of tastes.

  • 1/4 c. olive oil
  • 8 tbsp. butter
  • 2 lbs. chicken pieces skinless, boned or boneless
  • 3-4 cooking onions sliced
  • 12 oz. tomato sauce
  • 6 oz. tomato paste
  • 1 tbs. oregano, dried
  • 2 tsp. cinnamon
  • salt & pepper to taste
  1. In a stew pot, heat olive oil and butter. Add the chicken pieces, turning them to brown all sides. Add onions, toss, and continue browning.

  2. Sprinkle oregano over chicken and onions, then add the tomato sauce and paste. 

  3. Add cinnamon, salt, and pepper.

  4. Simmer on low heat a few hours, adding water as needed.  Serve, or cool and reheat.
