Cranberry-Walnut Buttery Oatmeal Cookies

Ingredients

  • 1 c. butter (2 sticks), softened I like Irish butter (82% butter fat)
  • 1 c. brown sugar, packed
  • ½ c. granulated sugar
  • 2 tsp. vanilla
  • 2 eggs
  • 1 ½ c. flour
  • ½ tsp. baking soda
  • ½ tsp. baking powder
  • 1 tsp. salt
  • 3 c. old fashioned oatmeal
  • 1 c. dried cranberries
  • 1 c. walnuts, chopped

Instructions

  • Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Beat together sugars and butter until fluffy. Add vanilla and eggs, beating after each addition.
  • Mix together in a separate bowl: flour, salt, baking powder and baking soda. Mix into butter and sugar mixture.
  • Next, mix in oatmeal, cranberries, and walnuts. Combine well.
  • Drop dough by tablespoonful onto parchment lined baking sheets.
  • Bake for 15 minutes, or until cookies are golden brown. Bake longer for crispier cookies, less for soft-centered cookies. Cool on a wire rack.
