Quinoa and Veggie Salad Is Healthy, Easy, and Delish

This quinoa and veggie salad has been a big hit with my kids, nieces and nephews. It’s really easy to make. You can use whatever vegetables you prefer, or that you have on hand.

Why Is Quinoa A Superfood?

Quinoa is a grain that provides “complete protein,” meaning that it contains an adequate proportion of all nine of the essential amino acids necessary for the dietary needs of an organism. (source: Wikipedia)

Make It Ahead

I usually prepare the salad in the early afternoon and refrigerate it until an hour or so before dinnertime. Then, I take it out of the fridge to warm up to room temperature. This seems to enhance the flavors.

Bottled or Fresh

You can use a commercial balsamic dressing or make your own balsamic vinaigrette. To keep it healthy, try to avoid commercial dressing with added sugars.

Quinoa and Veggie Salad

An easy salad that provides complete protein, plus fiber and antioxidants.  Make it a main dish meal, or a hearty side.
Use any vegetables that you have on hand.  Blanching some, like broccoli, peas, carrots, and asparagus will give you a nice flavor and texture.

Ingredients

  • ½ cup quinoa
  • 1 cup water
  • 1 tsp salt
  • 1 tbsp olive oil
  • 2 cups sugar snap peas
  • 2 cups broccoli florets
  • ¼ cup white balsamic dressing

Instructions

  • Mix together quinoa, water, salt, and olive oil. Bring to boil, cover and simmer according to package directions. 
  • Cut broccoli into florets, and snap peas in half.  Bring a medium saucepan filled with water to boil. Add vegetables and cook about 1 minute. Drain the veggies and place in a large serving bowl.

  • Add cooked quinoa and toss to mix. Serve at room temperature, or chill until ready to serve.
