Breakfast can be difficult for those of us who have trouble getting started in the morning. Add the desire to be gluten-free and low carb, and it seems like the only thing available is a hearty, messy dish of scrambled eggs and bacon. Time and motivation can knock that idea out of the ball park.
This morning, I was thinking egg salad, because I had hard-boiled eggs in the fridge. But, I wanted something more without adding bread; and, it would be nice to incorporate some fruit or veggies.
So, my egg salad idea started growing. Crumble bacon into the egg salad? Make a BLT with egg salad? Make it a wrap? Could I make it without bread? Noodle and rice bowls are popular. Why not a breakfast bowl with my BLT egg salad ideas?
The BLT Breakfast Bowl is born! This breakfast is hearty, and helped me through cleaning the house today. No, it doesn’t clean the house, you do — with the fortification of a good breakfast. Honestly, it is a salad, but I thought that calling it a “Bowl” gave it a modern spin, and may help me sell it to my family as a legit breakfast.
In order to make this a convenient breakfast, prepare your bacon and hard-boiled eggs ahead of time and keep them in the fridge. These are nice items to always have on hand. You can add them to salads, sandwiches, quick snacks, and so on. I like to bake bacon, as I’ve posted previously. When your larder is well-stocked, everything in life becomes easier!
BLT Breakfast Bowl
Ingredients
2 hard-boiled eggs
2-3 rashers of cooked bacon
Chopped ripe tomato
Minced onion
Greens – kale, spinach, lettuce, what have you
Mayonnaise
Mustard
Salt and pepper
Method
Step 1: Make Your Egg Salad
Just chop up the eggs, throw in some mayo, mustard, salt and pepper.
Step 2: Make Your Bed
Line a bowl with greens
Step 3: Chop up the Veggies and meat
Chop the tomato, onion, and bacon.
Step 4: Serve!
Put everything on top of your greens. Enjoy!
