Turkey and Gravy on Biscuit made with leftover turkey was my hands down favorite cafeteria lunch when I was in elementary school.
I don’t think the turkey was served with gravy – it was more like a turkey broth thickened with cornstarch – but I loved it.
The biscuit was split open and a big glob of instant mashed potatoes sat on the side. As the turkey in sauce was ladled over those carbs, the plate looked like a gravy swamp.
It was glorious!
This lunch entree was rounded out with canned green beans, fruit cocktail, and lemon chiffon for dessert.
I’m in heaven just remembering it.
If you search online, this concoction is sometimes called “turkey slop,” which doesn’t sound great. So, let’s call it turkey and gravy.
Leftover Turkey Gets Its Due
Though we’ve learned more about good nutrition since those days, sometimes it’s fun to indulge. So, here’s my rendition of Turkey and Gravy.
It’s perfect for that leftover turkey meat, especially if the turkey legs are still hanging around in your fridge.
Turkey and Gravy
Ingredients
- 1-2 c. leftover turkey meat including dark meat stripped from thighs, wings, and/or legs
- ½ c. butter 1 stick
- ¼ c. flour
- 1 ½ c. chicken or turkey broth or stock
- 1 bay leaf
- 3 tsp. dried tarragon
- ½ tsp. black pepper
- ½ tsp. Paprika
- ¾ tsp. Salt
Instructions
- Heat broth in a small pot.
- Strip meat from turkey and tear into bite size pieces. Discard bones, skin, and cartilage. Set aside.
- In a separate pot, melt butter over medium low heat. Whisk in flour. Stir continuously until smooth and mixture begins bubbling.
- Reduce heat and continue whisking to cook flour (about a minute).
- Stir in heated broth in 1/2 c. increments. Whisk to keep the mixture smooth.
- Add as much broth as you wish to make the gravy pourable.
- Mix in salt, pepper, paprika, tarragon, and bay leaf.
- Adjust seasoning and then stir in turkey meat.
- Serve over biscuits, mashed potatoes, toast points, etc. Turkey and Gravy may be cooled and refrigerated to serve later. Makes about four servings.
