Any-which-way Cauliflower Bites: Cooking Up Your Farmer’s Share

Any-which-way Cauliflower Bites are an evolutionary advancement from the cauliflower buffalo chicken recipe a Facebook group member suggested to me.

Lots of Options: Vegan, Gluten-free

What makes these advanced? Well, if you don’t like (or can’t stomach) spicy, you can use your favorite dipping sauce to flavor them.

You can use nut milks and tortilla crumbs for vegan and gluten-free options. Delicious!

 

If the sauce you choose is a bit thick, like some commercial barbecue sauces, just add a little water to make the consistency more easily absorbed by the bread crumbs.

Or, you can add your favorite herbs and spices to the coating crumbs and skip the sauce altogether.

Cauliflower Bites Taste Great and They Are Healthy!

The basic recipe is given, and some suggested flavors.  The calorie count is for bites made with coconut flour, 2% milk, and cayenne pepper sauce.

Don’t tell the kiddies (or, spouse??) that it’s cauliflower; they may not even realize it! Ha!

What Other Veggies Have You Got?

This recipe would also be great with eggplant or zucchini.  Just keep an eye on baking time, and reduce the temperature to 350 degrees, as both of these veggies cook faster than cauliflower.

Sure, I’ve been gardening for decades, but I find this community more fun, and less “know-it-all,” than some of the others.

It’s a “closed group,” but you just answer one or two questions about why you want to join, and you’re in. I guess they are trying to monitor for fake profiles, businesses selling stuff, etc.

If you’ve had a bad experience, give a new group a try.  You just might find a bunch of people who are active, happy, and friendly – just like you!

Any-which-way Cauliflower Bites

Use any flour and any milk that you prefer.  Make it vegan with nut milks, gluten-free with nut flours and tortilla chip crumbs. Just whisk the flour and milk together until the batter has the consistency of pancake batter.

Ingredients

  • 3-4 cups cauliflower, cut in pieces
  • cup coconut flour or whatever flour you prefer
  • ¾ cup milk can also use nut milk
  • 1 cup bread crumbs panko crumbs are crunchy
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 5-6 sprays olive oil spray
  • ½ cup traditional cayenne pepper sauce or sauce of your choice

Instructions

  • Wash, trim, and cut cauliflower into bite-size piece.
  • Line a baking sheet with foil.  Spray the foil with olive oil spray.  Preheat oven to 400 degrees F.
  • Mix flour and milk until you get a good, pancake-like consistency.  You may need to add more flour or milk. (This recipe uses coconut flour.)
  • If you are seasoning the bread crumbs rather than using sauce, add the seasonings to the bread crumbs now.
  • Dip cauliflower into batter, then into bread crumbs. Place on cookie sheet. Sprinkle each bite with salt and pepper.
  • Spray each bite with a bit more olive oil spray.
  • Bake at 400 degrees for 10 minutes. (or 20 minutes total for the "no sauce" version). Remove from oven.
  • If you are using sauce, dip each cauliflower bite into the sauce of your choice, then return to baking sheet. Bake an additional 10 minutes.
  •  Serve immediately.

Notes

Try this recipe with eggplant or zucchini! Yum!
