It’s hard to get a good breakfast on the go, especially when you are dragging. Here’s a quick breakfast that provides tons of nutrients without adding bad fats or sugars. You can double the recipe to serve four.

Ingredients:
1 mashed banana
1/4 tsp. vanilla (I like The Spice House)
dash of flaked sea salt (optional) (I like The Spice House)
1/4 tsp cinnamon (I like The Spice House)
1/4 c. almond flour
1/2 c. oats (steel-cut are a bit rough to chew, opt for something more palatable)
1/4 c. walnuts
Method:
Preheat oven to 350°F and line a cookie sheet with parchment paper.
Mash banana in a bowl. Add vanilla, salt, and cinnamon. Stir in almond flour, oats, and walnuts.

Drop mounds onto cookie sheet. Sprinkle with more cinnamon, if desired.

Bake for 15 min., remove and cool.

Extras can be frozen.
