Mediterranean Potato and Herb Salad
Use fresh herbs and potatoes, and freshly squeezed lemon. How can you go wrong? Not only is this recipe easy, but it avoids the mayo and refrigeration issues.

Ingredients:
6 red or gold potatoes
1/2c. mixed, chopped fresh herbs, like parsley, oregano, mint, thyme, marjoram
bunch of green onions
2 lemons
olive oil
salt and pepper
Method:
Boil the potatoes until you are just able to pierce with fork. Drain and allow to cool to room temperature.
Chop herbs and green onions and place in large bowl.
Juice lemons and pour into measuring cup. Add enough olive oil to make a total of 2/3 cup dressing.
Peel and cut the cooled potatoes. Add to herbs and green onions. Add salt and pepper to taste. Mix dressing to combine lemon juice and olive oil. Pour over potato salad.
Chill for at least an hour, mixing occasionally.
You can serve this flavorful dish as a side, or put some on top of mixed greens for a delicious salad. Super easy and fresh tasting!
