Fluctuating between the desire for healthy eating, and the yearning for the taste of classic dishes like ratatouille, can be a challenge. There’s always that fear that the dish just won’t be as good.

Grilling, rather than sauteing, is a healthy option for vegetable prep; but, will the  classic recipes and tastes suffer?
